Mashed Parsnips with Crème Fraîche

This is a super easy side dish that makes a great alternative to mashed potatoes. The crème fraîche adds a slightly tangy flavor and a nice richness to the dish. And here's a time saver--if you give your parsnips a good scrub there's no need to peel them. Like many vegetables, the skin of the parsnip contains valuable nutrients.

Ingredients

SERVINGS: 4 to 6 Serving(s)
  • 1.5 pounds parsnips, washed and sliced 1/2” thick
  • 1/2 cup crème fraîche
  • 2 tablespoons Chopped fresh chives
  • 4 tablespoons unsalted butter
  • to taste salt and pepper

Preparation

Boil parsnips in a pot of salted water until very tender, about 15 minutes. Drain well and return parsnips to still warm pot.

Add creme fraiche, butter, and chives and mash well. 

Taste and season with salt and pepper. Serve warm.
