Imagine tasting pristine Alaska waters—that’s the joy of summer oysters from our northern farms. Alaska’s cold, glacier-fed waters produce consistently sweet, firm oysters year-round, perfect for bringing that restaurant experience home.
The journey begins with the tag—a small paper attached to every lot of shellfish sold that reveals and connects you to the precise waters where they were harvested, as well as the harvest date. Each growing area creates its own distinctive flavor profile— some mineral-tang, others cucumber-fresh. Save copies of the tags to your phone, and track which areas, seasons, and farmers produce the flavors and textures you love.
What chefs know, you should too: the freshest oysters are the ones you open yourself! Your first successful shuck delivers an unmatched sense of satisfaction that makes them taste better. Impress your guests with both the oysters and your skills. For summer entertaining, nestle your treasures in crushed ice with a simple mignonette. Prefer them cooked? Place on a hot grill until they pop open, slide a dollop of compound butter into the shell, and cook 3–5 minutes until the butter browns.
With proper handling, serving oysters at home isn’t just easy—it transforms an ordinary gathering into a coastal celebration, bringing the fresh taste of the sea directly to your table.

SUMMER COOL, SUMMER SAFE, OYSTER TIPS
Alaska farmers maintain strict cold chains from harvest to your hands, but proper home storage is essential—especially during summer gatherings.
- Clean outside with a brush to remove debris or marine hitchhikers.
- Store at 32–45°F in refrigerator, cupped side down with a damp cloth on top.
- Give them air (no airtight containers) and NO standing water.
- Discard any gaping oysters that don’t close when tapped.
- Fresh oysters should have an appetizing seaside scent and react to lemon.
- Keep cold on the plate, especially for outdoor gatherings.
These living oysters can stay fresh up to two weeks when properly stored.
