Chasin’ Salmon

Summertime is salmon time in Alaska. Whether you’re working on a seiner in False Pass, heading to fish camp with the family, spending your 10th season guiding out of Yakutat, or planning your first trip to Alaska’s bountiful waters, you’re bound to hook up with some wild Pacific salmon. Carefully managed to feed us for generations to come, wild salmon nourish our bodies and our spirits. These salmon are sporting their spawning colors—look for them in streams and rivers around the state.

Chef Mandy Dixon likes to use sockeye salmon for these burgers. It’s perfect for the bits scraped from the salmon frames after filleting- we call it “spoon meat”. The rhubarb chutney pairs beautifully with salmon, and would be great with other grilled fish, pork, or mixed into a vinaigrette.
