Ingredients
  

  • Prepared frozen phyllo dough (6 sheets), thawed
  • 3 tablespoons olive oil
  • 6 ounces Brie
  • 1 cup cranberry chutney

Instructions
 

To make the phyllo cups:

  • Lay thawed phyllo dough on a clean counter and cover with a damp towel. Place 1 sheet on your work surface. Brush with olive oil, top with another sheet, and brush again. Repeat until you have a stack 6 sheets thick. Cut the stack into squares to match the number of wells in your mini muffin tin (typically 24).
  • Press each square gently into a muffin cup. Bake at 350° F for 10 minutes, until golden. Use immediately or freeze for later.

Assemble and bake:

  • Place a ¼-ounce chunk of Brie in each phyllo cup. Top with 1 teaspoon cranberry chutney.
  • Bake at 375° F for 10–15 minutes, until the Brie is melted and bubbly.
