Grilled Alaska Oysters with Herbed Compound Butter

Ingredients
  

  • Oysters
  • Herbed Compound Butter (recipe below)

HERBED COMPOUND BUTTER

  • 1/2 pound butter at room temp
  • 4 cloves garlic, minced fine
  • 1/4 cup finely minced fresh herbs such as chives, thyme, marjoram, parsley, sage, rosemary, and basil
  • 1/4 teaspoon salt

Instructions
 

  • Preheat grill. Shuck oysters and lay on a baking sheet. Try to keep the oyster liqueur in the shells with the oysters. Place a pat of herbed compound butter on each oyster and then place oysters directly on the grill. Grilling usually takes 15 to 20 minutes depending on the size of oysters. They are done when the liqueur turns a bit lavender/brown, and the oyster flesh is firm. Serve with additional herbed compound butter.

HERBED COMPOUND BUTTER

  • Mix all ingredients well in a bowl. Form unused butter into a log, and store wrapped in parchment paper in the fridge. Freezes well.
