All Day Egg Salad
Serves 4
The addition of bacon turns this into a slightly more robust version of a traditional egg salad that you can truly enjoy all day - breakfast, lunch, or dinner. If you don’t have a jar of the Alaska Salt Co.’s Salt & Vinegar blend on hand you can substitute a 1/2 teaspoon of regular salt and a teaspoon of apple cider vinegar. If you happen to have some smoked salmon on hand, you can add that instead of (or in addition too) the bacon.
Ingredients
- 4 strips bacon, chopped
- 8 each hard-boiled eggs, peeled and chopped
- 2 tablespoons minced green onion
- 1/2 cup chopped celery
- 1 teaspoon yellow mustard
- 1/2 cup mayonnaise
- 2 tablespoons sour cream
- 1/2 teaspoon Alaska Salt Co. salt & vinegar
Instructions
- Brown the bacon and drain on a paper towel, reserving the fat for a later project. In a large bowl combine the cooked bacon with the eggs, onion, celery, mustard, mayonnaise, sour cream, salt, and black pepper. Mix well, taste, and adjust seasonings.
