Horsetail Herbed Iced Tea

Horsetail can be found in early spring in moist marshy areas as well as forests. High in silica and nicknamed “Athlete’s tea,” the plant helps reduce inflammation and strengthen bones, hair, and nails. I included this plant because it is highly abundant and easy to identify.
Servings 4 Serving(s)

Ingredients

  • 1 handful dried horsetail herb
  • 4 cups water
  • 1 lemon
  • ½ cup honey
  • 1 tray of ice

Instructions

  • Heat water in a medium-sized pot over high heat. Break dried horsetail herb in half and gently drop into water. Bring to boil and immediately remove from heat. Cover and steep for 10 minutes.
Pour honey into a large jar or heat safe pitcher. After 10 minutes, remove horsetail herb from the pot with tongs.
Pour horsetail tea into the pitcher and mix until honey dissolves. Fill the pitcher with ice and 1 sliced lemon. Let cool in the refrigerator until chilled. Serve over ice.

False lily of the valley, also known as deer heart greens, carpets the forest edge and can be found in abundance in springtime. Tastiest when its leaves are young, this green makes a great addition to scrambled eggs or salads. Add sparingly to dishes because of the prominent peppery flavor.
