Ingredients
- ¼ cup olive oil
- 1/8 cup garlic, minced
- 1/8 cup onions, chopped
- 1 tablespoon patis (fish sauce)
- 15 large prawns or ½ pound ground pork
- ½ small yellow squash
- ½ pound string beans
- 1 large bitter melon
- 10 pieces okra
- 2 medium long (not round) eggplants
- ½ cup lima beans
- 2 large tomatoes
- ½ cup water, plus more as desired
Instructions
- Sauté minced garlic and chopped onions in a pan with olive oil. Add tomatoes and shrimp with a little fish sauce (patis). Then, add the veggies that need more time to cook, like lima beans and squash. Sauté for about 5 minutes or so, stirring constantly, then add string beans, okra, and lastly, the bitter melon and 1 cup of water. Let it simmer, stir and cover until the vegetables are cooked through.
