
Quinoa Power Bowl
Prepare the quinoa according to package instructions. Allow to cool. Combine with all of the salad vegetables. Mix all the dressing with the veggies. Optional: serve over a bed of greens, and top with crumbled feta cheese.

For the Salad
- 1 can quinoa (dry)
- 1 can black beans (rinsed)
- 1 can kidney beans (rinsed)
- 3/4 cup fresh jalapeño, sliced
- 3/4 cup black olives, sliced
- 3/4 cup red onion, diced
- 3/4 cup fresh bell pepper, diced
- 3/4 vup frozen corn
For the dressing
- 1/2 cup bottled ranch dressing (or homemade)
- 1/4 cup barbecue sauce
- 1 tablespoon canned chipolte peppers, minced
- 1 tablespoon taco seasoning
