Quinoa Power Bowl

Prepare the quinoa according to package instructions. Allow to cool. Combine with all of the salad vegetables. Mix all the dressing with the veggies. Optional: serve over a bed of greens, and top with crumbled feta cheese.

Ingredients
  

For the Salad

  • 1 can quinoa (dry)
  • 1 can black beans (rinsed)
  • 1 can kidney beans (rinsed)
  • 3/4 cup fresh jalapeño, sliced
  • 3/4 cup black olives, sliced
  • 3/4 cup red onion, diced
  • 3/4 cup fresh bell pepper, diced
  • 3/4 vup frozen corn

For the dressing

  • 1/2 cup bottled ranch dressing (or homemade)
  • 1/4 cup barbecue sauce
  • 1 tablespoon canned chipolte peppers, minced
  • 1 tablespoon taco seasoning
