
Roasted Radishes with Citrus Brown Butter
I love raw radishes - it can be hard to get them home before I eat them! That sharp crispness is just the thing on a hot summer day. But, if you’re looking for a dinner idea that can use up a fair amount of radishes in a unique way, we recommending roasting them. You can keep it simple, or try this 2-part recipe that features a quick sauce of brown butter and citrus. This classic approach to sauce is a great way to dress up fish or chicken as well.
Ingredients
- 2 bunches medium radishes, tops removed
- 1 tablespoon olive oil
- salt and pepper to taste
- 3 tablespoons unsalted butter
- 1 teaspoon fresh lemon juice
- 1 teaspoon fresh orange juice
- 2 teaspoons orange zest
Instructions
- Heat oven to 400°F. Cut radishes in half and toss with olive oil, salt, and pepper. Place seasoned radishes on a cookie sheet or baking dish and roast until tender, stirring occasionally, about 15 - 20 minutes. Meanwhile, melt butter in small but heavy skillet over medium-high heat and cook carefully, swirling skillet, until butter browns. Remove skillet from heat and stir in fresh lemon and orange juice and a pinch of salt. Drizzle brown butter over the roasted radishes as they come out of the oven and garnish with orange zest before serving.
