Salted Caramel Choco-latte

Nothing quite compares to the comfort of a warm drink to soothe the soul on a cold, crisp Alaska winter day. What could be better than a chocolate caramel drizzled latte, topped with luxurious whipped cream and sea salt? How about a cannabis-infused version? To give your Salted Caramel Latte an extra kick, simply add one (or two...) of our MoMo’s Carmelitos. The delicious caramel melts perfectly into a cup of hot coffee. Simply stir, sip, and enjoy. Or, pair with our Caramel Pretzel Crunch bars for an indulgent treat. The flavor of this latte was inspired by those customer-favorite bars.

Ingredients

For the Chocolate Whipped Cream

  • 1 cup cold heavy whipping cream
  • 2 tablespoons cocoa powder
  • 2½ tablespoons powdered sugar
  • ½ teaspoon vanilla
  • Pinch of salt

For the Latte

  • 2 shots espresso or 4-8 ounces coffee
  • 1 cup warm milk of your choice
  • 1 tablespoon caramel syrup (optional: for an infused beverage, use 1 of our Carmelitos)
  • Sea salt (try the Spit Salt from Alaska Salt Co.)
  • Caramel sauce for rim
  • Crushed pretzels for rim
  • Your favorite chocolate sauce (optional)

Instructions

  • Make the Chocolate Whipped Cream:
In a medium bowl, combine all ingredients. Using a mixer with a whisk attachment, whip ingredients together until stiff peaks begin to form. This may take a few minutes. Keep whipped cream chilled until ready to serve.
Note: Makes enough for 4 drinks.
    Make the Latte:
Pour caramel sauce onto a plate and crushed pretzels on a second plate. Dip the rim of the glass into the caramel and then into the crushed pretzels.
Drizzle chocolate sauce around the inside of the glass. Add 1 tablespoon of caramel (or a Carmelito) into the glass (or a Carmelito). Pour the hot coffee over the caramel and stir. Add the warm milk. Top with a dollop of whipped cream. Top with salt and garnish with a pretzel.
Note: Can be served cold. Just add ice and use cold milk.

As Mossy Kilcher says, a clean glass of water needs no recipe. Inspired by Mossy’s thoughtful gathering of Alaska’s bounty, this warming milk tea riffs on the familiar boba tea with homemade yarrow-flavored, tinier pearls. An optional pinch of butterfly pea powder makes the pearls look like water droplets in the glass. The pearl recipe can be adapted to just about any liquid (wines, juices, vinegars, coffees, broths, etc.) if the same ratio of liquid to agar is used. Agar gives the eye appeal of molecular gastronomy with relative ease in the kitchen.
