Spiced Mixed Nuts

Spiced Mixed Nuts

For a really fiery treat, double the cayenne pepper.

Ingredients
  

  • 4 cups raw mixed nuts—try 1 cup each of peanuts, almonds, cashews, and pecans
  • 1 teaspoon cinnamon
  • 1 teaspoon ground cardamom
  • ½ teaspoon ground allspice
  • ½ teaspoon cayenne pepper
  • 1 teaspoon kosher salt
  • ¼ cup birch syrup
  • ¼ cup maple syrup
  • 1 tablespoon olive oil

Instructions
 

  • Preheat oven to 350° F and line two baking sheets with parchment paper.
    Combine nuts in a large bowl. In a small bowl, whisk spices and salt together. Whisk in syrups and olive oil. Pour over nuts and mix thoroughly until evenly coated and there’s no mixture left on the bottom of the bowl. Spread onto the prepared baking sheets.
    Bake for 15 minutes, stirring every 5 minutes to ensure even cooking. Remove from oven and cool on a rack for 10 minutes. Then remove parchment paper or it will stick to the nuts. When thoroughly cool, break nuts apart. Store in an airtight container. Will keep for about 2 weeks.
