Dinner at South with Chef Carlyle Watt of Fire Island Rustic Bakeshop
From Chef Watt " 'Cook like a Baker, Bake like a Chef.' These were words that a baking mentor gave me and they have always stuck with me. I will be combining bread and pastry techniques with Alaskan vegetables, seafood, and sauces. Sorry, but no dietary restrictions will be accommodated."
A South Carolina native, Carlyle took off for culinary school at the CIA in Napa, CA after working in his home state. He took a leading role in the school's student-run garden and staged frequently at the French Laundry gardens, as well as the Restaurant at Meadowood. He also discovered his passion for crusty loaves of sourdough bread while there. Upon graduation, he moved up to Anchorage to work as a personal chef. In 2012, he joined Fire Island Rustic Bakeshop, where he is currently the head baker.
In 2017, Watt received a James Beard award nomination for "Outstanding Baker".
