Japan in Alaska
Alaska blueberry homemade marshmallows; matcha swiss roll with Alaska rhubarb mousse. Oishi Bakery in Fairbanks glistens with sugar and blooms with the loft of puff pastry. The bakery uses healthy, quality ingredients to create Japanese baked goods and entrees featuring Alaska ingredients. “Oishi” means delicious in Japanese and owner Shelly Jensen aims to uphold the Oishi Bakery name by creating memorable cuisine with locally sourced flavors. Dishes include desserts like black sesame swiss rolls and decadent chocolate sandwich langues de chat and beautiful lunch plates like onigiri (rice balls) and hearty miso soup.
During the pandemic, Jensen switched to operating Oishi Bakery solely from the pick-up window and DoorDash delivery service. Despite the challenges, Jensen’s restructuring allowed new customers to discover the bakery and try Oishi for the first time. She expects window service to continue throughout the rest of the summer to keep customers and staff safe and healthy as she prepares her winter strategy.
High praise and community support inspires Oishi Bakery to stay open during these challenging times and continue to serve happy customers. “It was heavenly,” says one online commenter, “just like I used to get in Okinawa.” As long as Oishi Bakery keeps turning out their sweet and nourishing treats, customers will keep crowing “amazing,” “delicious,” and “beautiful.”
