In late June comes the summer solstice. The days are the longest they'll be all year and Alaskans (and our plants) soak up every ounce of sun we can. Farmers markets feature a wide variety of vendors and even more will show up as more crops are ready for sale in the coming weeks. A staff favorite right now are the wonderful Alaska-grown cucumbers, which are great in salads, but also in these cucumber cocktails. Plus, strawberries ready — just in time for those Fourth of July celebrations. Happy summer!
