Berries and rosehips; salmon and halibut; venison and grouse; carrots, cabbage, potatoes and apples… there’s a bounty of food to grow, harvest, hunt, and enjoy in Southeast Alaska. But each bounty has its season. So extend your favorite harvest season by learning to simply, and safely, preserve Juneau’s bounty! Over the course of four Saturday classes (Jan 4, 11, 18, 25 from 1-6pm) you will learn to make sauerkraut, pickles, infused vinegars, jams and jellies. We’ll also pressure can fish, meat and vegetables in jars, dehydrate fruit and vegetables, grind sausage and make jerky.

The instructor is Sarah Lewis, AIA, MSW, the Health, Family, and Community Development Agent for the Juneau District of the University of Alaska Cooperative Extension Service.

Class Fee: $120.00
Ingredients & Supplies: $79.00
Student will need to purchase ahead of time and bring to the first class: 24 wide-mouth, half-pint jars.

Registration, class and supply fees must be received as soon as possible and at the latest by December 30th. Registration is not final until all fees are confirmed received. Class is limited to 12 students.
