Alaska Beer Cheese Dip

When you live in Alaska, one of the most common questions you are asked is, “How did you end up in Alaska?” My favorite answer is that I took the long way. This recipe took the long way to get here as well. It was first inspired by a little pizza place in Marquette, Michigan and their famous garlic cheese sauce, then adapted once again during a year I spent living in Kentucky, and finally finished thanks to my love for local Alaska beer.

Use any lightly flavored beer you like to drink in this recipe. Serve with crackers, vegetables, or my personal favorite—warm breadsticks.

Ingredients

SERVINGS: 24 Serving(s)
  • 2 pounds white Cheddar cheese, cut into ½ -inch cubes
  • 2 cloves garlic, roughly chopped
  • 3 tablespoons Worcestershire sauce
  • 1 teaspoon dry mustard
  • ¼ teaspoon Barnacle Foods Bullwhip Hot Sauce, or your favorite dash of zing
  • 6—9 ounces King Street Brewing Pilsner or Glacier Brewhouse Blonde Ale
  • ½ teaspoon salt

Preparation

Place cheese in the bowl of a food processor and blend until completely smooth. Add in the garlic, Worcestershire, mustard, and hot sauce. Blend to combine. Add the beer a couple of ounces at a time and process until the cheese is spreadable. Stir in salt. Store cheese covered in the refrigerator. Let warm to room temperature before serving.
