Blueberry Gastrique

A wonderful sweet-tart accent for everything from grilled halloumi to braised moose to steamed vegetables. Heck, even ice cream!

Makes about a cup

Ingredients

  • ½ cup balsamic vinegar
  • ½ cup sugar
  • ½ cup blueberries
  • 2 tablespoons water or stock

Preparation

Combine all ingredients in a small pot. Bring to a boil over medium heat, reduce heat to medium low, and simmer for 30 minutes until thick and syrupy. Press gastrique through a fine-meshed strainer into a bowl. Allow to cool before serving.
