Ingredients

  • ¼ cup olive oil
  • 1/8 cup garlic, minced
  • 1/8 cup onions, chopped
  • 1 tablespoon patis (fish sauce)
  • 15 large prawns or ½ pound ground pork
  • ½ small yellow squash
  • ½ pound string beans
  • 1 large bitter melon
  • 10 pieces okra
  • 2 medium long (not round) eggplants
  • ½ cup lima beans
  • 2 large tomatoes
  • ½ cup water, plus more as desired

Preparation

Sauté minced garlic and chopped onions in a pan with olive oil. Add tomatoes and shrimp with a little fish sauce (patis). Then, add the veggies that need more time to cook, like lima beans and squash. Sauté for about 5 minutes or so, stirring constantly, then add string beans, okra, and lastly, the bitter melon and 1 cup of water. Let it simmer, stir and cover until the vegetables are cooked through.
