Spaghetti Sauce with a Secret

Makes enough for 1 pound of dry spaghetti

Ingredients

  • 1 28-ounce can good quality crushed plum tomatoes
  • 1 large onion, peeled and quartered
  • 6 tablespoons butter
  • 1½ tablespoons white miso
  • Sea salt, to taste

Preparation

In a heavy-bottomed pan, combine tomatoes, onion, butter, and miso and simmer on medium-low heat, stirring occasionally, until the sauce is thick and concentrated.

Remove onion and toss with hot pasta. Adjust salt. Garnish with freshly ground pepper and Parmesan.
