Arugula Gimlet

Got too many greens? Make sure they don't go to waste with this garden-fresh cocktail. Arugula's spice stands up nicely to a traditional dry gin. You could also substitute an herbaceous gin and basil in place of the ingredients listed here.

Ingredients

  • 2 ounces London Dry gin
  • 1 ounce lime juice
  • 1/2 ounce simple syrup
  • 1 cup arugula
  • lime wheel, for garnish

Preparation

Pour gin, simple syrup, and lime juice into a cocktail shaker. Fill the shaker partway up with ice and top with arugula. Replace the lid and shake vigorously until very cold and the shaker is covered in frost, about 20 seconds. Double-strain into a coupe glass and garnish with a lime wheel.
