Ingredients
- ½ ounce flat IPA beer
- 1 ounce Stoked Beekeeping honey
- 2 ounces Port Chilkoot Boatwright Bourbon
- ¾ ounce IPA-honey syrup
- ¾ ounce lemon juice
- Grapefruit peel
- Stoked Beekeeping bee pollen
- Foam from a freshly opened bottle or can of IPA
Preparation
Make the IPA-honey syrup. Mix flat IPA with honey. Makes enough for 2 cocktails. Make as much as you need by combining IPA with honey in a 1:2 ratio (1 part IPA to 2 parts honey).
Combine the bourbons, IPA-honey syrup, and lemon juice in a small cocktail shaker.
Give the mixture 2 to 3 good shakes, then “dirty dump” the mix (pour without straining) into a lowball or bucket cocktail glass. Garnish the glass with Stoked Beekeeping bee pollen, IPA foam from a fresh bottle or can, and grapefruit peel.
Pairing notes: When you’re not enjoying it at home, come pair your “All That Bitters” with The Kannery’s Alder Smoked Alaskan King Salmon featuring crispy Brussels sprouts, pickled Fresno chiles, house preserves, candied pecans, baked brie, toast points, edible flowers, and jalapeno bacon jam.
