Ingredients
- ½ cup cornstarch
- 1 teaspoon garlic powder
- Zest of 1 lemon
- 1 teaspoon salt
- 1 teaspoon paprika
- ¼ teaspoon black pepper
- 2 eggs, beaten
- 1 cup panko crumbs
- 0.8–1 pound halibut or other white fish, cut into strips
- Cooking oil spray (optional)
- Lemon slices
- Sea salt
Preparation
(If you’re making fries, you’ll want to put them in the oven first thing.) Preheat the air fryer to 400° F. Create a breading station with three bowls. Fill the first with cornstarch, garlic powder, salt, pepper, zest, and paprika and whisk to combine. Fill the second with beaten eggs. Fill the last with panko.
Pat the fish slices dry with paper towel to dry them. Then coat each one first in the cornstarch mixture, then in egg, and finally with panko, making sure the crumbs stick to all sides. Spritz with oil if desired.
Load the preheated air fryer, making sure not to overfill. Allow space between the fish pieces so they don’t touch. Air fry for 8–11 minutes, depending on the thickness of the fish (9–10 minutes works for most fish, unless it’s very thin or very thick). Turn them halfway through. When they’re done, transfer them to a plate and immediately give them a generous squeeze of lemon.
